Pediococcus and Kluveromyces Can Degrade Aflatoxin M1 in Milk


A recent study demonstrated the ability of two probiotic bacterial Pediococcus pentosaceus and Kluveromyces marxians to adisorb and degrade aflatoxin M1 in milk. The strains reduce the presence of aflatoxin by 20 to 60 percent and also degraded the toxin into metabolites with lower toxicity.

If selected probiotics can reduce aflatoxin in milk, it is possible that a similar action may be possible in the anterior digestive tract.
